This small 2.75-inch long Wüsthof Classic Trimming Knife with its narrow curved blade moves smoothly along the bones for clean cuts. It is ideal for trimming the fat from chicken. The knife is precision-forged from a single piece of high-carbon stainless steel. It is tempered to 58⁰ Rockwell. The full tang knife has a triple-riveted handle. The handle is made from polyoxymethylene or POM as some call it. The knife has a full bolster for more safety and it is superbly balanced and makes your job easy. This is a very durable synthetic material that has a tight molecular structure to resist fading and discoloration. The handle is curved slightly downwards at the heel to avoid slipping. This is the best trimming knife for ribs.

The second knife is also from a German manufacturer. ZWILLING is in the business for over 280 years. The ZWILLING J.A. Henckels 2.75 Inch Trimming Knife is made of proprietary special formula steel. Precision-forged from a single piece of solid steel with a 57 Rockwell Hardness. Combined with ZWILLING’s FRIODUR ice-hardening technique, these blades are harder, sharper, and they retain their sharpness longer.
The knife is honed and hand-finished before the edge is laser-controlled. The full bolster provides the right balance and acts as a finger guard.
This full tang knife has a three-rivet handle made from polymer. The handle is curved slightly downwards at the heel to avoid slipping.
I like the Wüsthof a bit more because of its design. But both knives work really well.

The Victorinox Swiss Army Fibrox Pro 6 Inch Curved Boning Knife has a carbon steel semi-stiff blade. The curved-edge allows for smooth, clean cuts close to and around the bone. Thick meats like beef or pork require a less flexible knife, but this knife’s slight bend allows for a delicate touch. Think best of two worlds. In my opinion, this is the best fat trimming knife out there. The handle is from Fibro Pro for a non-slip grip. It is a light knife and you can work quite easily with it.

The Victorinox Swiss Army Cutlery 6 Inch Rosewood Curved Boning Knife looks a bit similar to the other Victorinox knife on this page but is a bit different. Technically they perform the same but this knife looks not so much technical like the one with the plastic handle. It looks better in a knife block for example. The pointed tip easily pierces meat. The curved-edge of the knife allows for smooth, clean cuts close to and around the bone. The steel is the same European stell Victorinox uses for all the knives.
The handle is made from Rosewood and tripel riveted to the blade.
Zelite Infinity Alpha-Royal Series 6 Inch Boning Knife
The Zelite Infinity Alpha-Royal Series 6 Inch Boning Knife features Japanese AUS10 “Super Steel” with 67-layer high carbon stainless steel Tsunami Rose Damascus pattern. Zelite uses liquid nitro cooling to get to a Rockwell Hardness of 61. The blade is hand finished using the traditional 3-step Honbazuke method. The blade is sharpened with 12 degrees per side and the cutting angle is mirror polished. The knife has very good edge retention as well as stain and rust resistance.
The round G10 black handle is triple riveted to the forged full Tang for increased strength and durability. The tapered bolster and steel end cap help to balance this knife.
Think the best from both worlds. An Asien style blade with the strength and balance of a western knife.
Hammer Stahl 6 Inch Boning Knife
The Hammer Stahl 6 Inch Boning Knife stands out on this 10 Best Trimming Knives page. It is the handle that is different. The knife has a thin, flexible German X50CrMoV15 High Carbon Stainless Steel blade. It is forged and tempered and has a Rockwell hardness of 55 – 57. This provides a good edge and lasting durability. Each cutting edge is measured by laser and later sharpened to a 20-degree bevel angle. It makes it easy to sharpen the knife at home as well.
The Pakkawood handle is infused with phenolic resin. This way Hammer Stahl combined the look of wood with the durability of plastic.
I do not like the design of the knife too much but I do like the performance of it. Nicely balanced and with the full bolster and little extra curve at the end of the handle it is very safe to work with the knife.

I am sorry you can not really see the Pakkawood handle on the picture above. It is laminated, polished, and triple-riveted for a good grip and the full tang adds stability. The knife is quite well balanced and easy to maneuver. A steel end cap on the butt of the knife helps to achieve the balance.

Jasni 6 Inch Damascus Steel Boning Knife
The Jasni 6 Inch Damascus Steel Boning Knife will look good in any kitchen. But do not get fooled by its looks. This knife is a serious workhorse that just happens to look very good. The blade is made from 76 layers of VG-10 high carbon steel.
The hand-polished wooden handle is very good to work with. The hand fits really good and I never slipped while working with it. The finger guard behind the bolster is just another safety stop.
