The Virginia Boys Kitchens 8 Inch Chef Knife has an almost Nordic design. For the blade, they use 420HC high-carbon stainless steel that’s been heat-treated and tempered to a 58 Rockwell hardness. Care Instructions — Hand Wash vs. Dishwasher
